This man is doing what you can find people all over Paraguay doing - he's preparing herbs, or yuyos, for tereré, the Paraguayan version of the Argentine and Uruguayan mate. Tereré is drunk ice-cold and different herbs are added to the water for different effects - relaxation, help with urinary ailments, fresh breath, etc. You can select the herbs you want and they're pulverized in these giant mortar and pestles, then put in a bag or right into your thermos.
